Method. Cook the noodles according to the packet instructions then drain them and set aside. In a pestle and mortar, make a paste from the garlic, coriander stalks, red chilli and lime zest.
In a bowl, combine sugar, lime juice, fish sauce, and rice vinegar. Whisk well until most of the sugar is dissolved. Set aside. Heat 1 Tbs. oil in a wok or frying pan over medium-high heat; cook the beaten egg until scrambled. Remove and set aside. In the same wok or frying pan, heat 2 Tbs. vegetable oil. Rinse in cold water and drain well. High a pan or wok over medium high heat. Cook your protein until almost cooked through then add the eggs and scramble. Next, raise the heat to high and add the Chinese broccoli, noodles, and pad see ew sauce. Quickly toss to combine until the noodles are coated in the sauce. Drain the noodles, run cold water over them to stop the cooking process, and then give them a good snip with a set of kitchen shears. Meanwhile make the pad thai sauce. Combine the tamarind, sugar, and fish sauce in a small bowl until the sugar dissolves. Heat up a little oil in a wok. Set aside. In a medium bowl, combine the brown sugar, fish sauce, soy sauce, lime juice, peanut butter, Sriracha/chili paste, and black pepper. In a large wok or skillet, heat the remaining oil over high heat, and stir fry the chicken for 2 to 3 minutes. Turn off the heat, and set aside. Method. 1- Add rice stick noodles to a large pot and then pour boiling water over the noodles. Soak noodles in boiling water for 8 minutes. 2- Then drain the water and rinse the noodles under cold water and set aside. Crack the eggs into a bowl and beat slightly. Set aside. In a large skillet or large wok, heat 1 tablespoon of oil over medium-high heat. Saute the beef for 6-8 minutes, until cooked, then remove from the skillet and set ahead. In the same skillet, add the remaining oil and add the carrot, bell pepper, and onion.
